Yeast Cinnamon Rolls

My grandma gave me this recipe for basic yeast rolls that you could fill with anything.

I asked my grandmother for a recipe that she liked making and she gave me this one. I like making it too! Cinnamon rolls are pure delight. You can use any filling for these rolls, though. I tried this with a jelly filling once and it all ran out and formed a sticky sheet on the bottom of the pan. I think the oven was too hot; it might work at a lower temperature and a longer bake time.

Ingredients

  • 1 envelope (7g) active dry yeast
  • 1/8 c lukewarm water
  • 1 Tbsp sugar
  • 3/4 c lukewarm milk
  • 1/2 tsp salt
  • 375g all-purpose flour
  • 1 Tbsp oil

Cinnamon Roll Filling

  • 3/4 c sugar
  • 3/4 c melted butter
  • 2 Tbsp cinnamon

Procedure

  1. Combine yeast, water, 1 tsp sugar. Let sit until it bubbles and rises. (I usually use instant yeast and skip this prefermentation step.)
  2. In a large bowl: mix remaining sugar, milk, salt.
  3. In the mixer: Mix milk mix, yeast mix, and 1 c flour. Beat until smooth. Gradually add flour until dough is stiff enough to knead.
  4. Flour hands and knead until smooth and elastic and handles well. You may need more or less flour.
  5. Place ball of dough in a greased bowl. Cover and let rise until doubled in size.
  6. Punch down dough and knead lightly. Roll into rectangle at 1/4 to 1/2 inch thickness. Spread the melted butter across the dough, add cinnamon sugar mix or whatever. Roll it up like a jelly roll.
  7. Cut into 3/4 inch slices. Place rolls into a greased pan or on a cookie sheet. They will spread so leave a little space for them to grow. Cover with a towel and let rise for a while.
  8. Remove towel. Bake 20 minutes @ 425 F until lightly browned.
  9. Cool and drizzle with powdered sugar glaze if you want.

This recipe is flexible ...you can spread with fruit or jam, dried fruit, whatever you like before rolling up. Yeast recipes are a bit imprecise as to amount of flour, some add an egg or use butter instead of oil. Just experiment! Good luck!
